Cooking Instructions

If cooking as a steak, season well and pan fry or BBQ for 6-7 minutes and then transfer to an oven for 10-15 minutes depending on how you like your steak and the thickness. Rest for 5 minutes before serving.
If roasting allow 25 minutes per 500g for well done; 18 minutes per 500g for medium, and 12 minutes per 500g for rare. Preheat the oven to 220°C. Put the beef into a roasting tin and season. Roast for 15 minutes, then lower the oven temperature to 180°C (Gas Mark 4) and roast for the remainder of your calculated cooking time. When the joint is cooked, cover loosely with foil and leave to rest for about 30 mins before serving.
